Drunken Cupcakes

There are few combinations better in life than liquor and baked goods.  Knowing I feel this way, Greg and Amy bought me the ultimate cookbook for Christmas - The Boozy Baker by Lucy Baker.    It's awesome - recipes for baked goods using all different kinds of liquor and recipes for drinks to go with them!

For a Saturday night gathering, I decided to try out 2: Lemon cupcakes with Campari frosting, and lavender almond cupcakes with honey frosting.

Here's how it started:

The recipes are well written and easy to follow, but I think on the next round, I would fill the cups a little less.  They were only about 2/3 full, but still baked up way over the liners, which caused the edges to get a little overdone.

I like to pipe on my frosting.  It's easier, faster, and pretty frosting can hide a multitude of issues.  It went well for the lavender almond honey ones:

But I over sugared the campari frosting so ended up having to use a spatula to do them, but they still turned out pretty well.

Both flavors were well-received.

  1. I'm so glad! Guessing they tasted at least as good as they looked? And what magical drink did you pair with them?!?

  2. They were pretty tasty. But as is usually the case for me, by the time I was done making them, I wasn't all that interested in eating them. I didn't do a drink pairing this time. The friend that was hosting the gathering is pregnant and I didn't want to make something yummy that she couldn't have. We'll try it again after the baby is born.
